Origin Story

Two pistachio traditions meet on one counter. The Antep kernel is small, deep green and aromatic — the baklava standard, grown on the dry limestone slopes of Gaziantep and Şanlıurfa. The Kerman plateau of Iran, the largest producing basin in the world, brings the long-shell varieties: Ahmad Aghaei, Akbari, Kalleh Ghouchi, Fandoghi. One harvest a year feeds twelve months of trade, so which origin and which grade you take is a decision about timing as much as taste.

Pistachio is a single-harvest crop: the whole year is supplied from one autumn. Volume moves out of origin from late October, and the widest choice of grades sits in the first months after the crop lands.
