Malatya is the heartland of the world's dried apricot trade. Two traditions live side by side: bright-amber sulphured apricots, and the dark, intensely sweet 'gün kurusu' — sun-dried with nothing added, the connoisseur's choice.

- 1Harvest and drying run July–August in the Malatya basin; sulphured and natural sun-dried lots are separated at this stage.
- 2New crop is graded by count per kilo from August — the widest size selection of the year.
- 3Out of season the trade reports the steepest tightening in dried apricot availability before the new crop lands.
