Origin Story

Mazafati comes off the palm dark, soft and heavy with moisture — closer to a fresh fruit than to the dry dates most markets know. The groves around Bam sit in a desert basin where hot days and cold nights concentrate the sugar without drying the flesh out. That moisture is the whole character of the date and also its discipline: it travels chilled, it is stored chilled, and a lot that has broken the cold chain is a different product entirely.
